1 Monthly Fryer Preventative Maintenance
Preparation
Read the 'OPERATION' section of the manual prior to filling or operating the appliance.
Turn the appliance OFF.
Draining the Oil/Shortening
Drain all the oil/shortening from the tank into a container and allow it to cool.
Is the container large enough to hold the entire contents of the tank and withstand 400°F (205°C) temperatures?
Open the drain valve to drain the tank.
Cleaning Components
Remove and clean the following components in pot sink, power soak sink or dishwasher

Safety Precautions
Wear apron, heat resistant gloves, and goggles for protection
Read the OPERATION section of the manual before filling or operating the appliance
Do not leave the appliance unattended during cleaning
Appliance Inspection
Check that all the parts are in place and secure
Check for loose parts or accessories around the appliance
Remove any foreign items such as aerosol cans from the area
Check for oil/shortening leaks around the inside and outside of the cabinet and appliance
Thermostat Calibration Check
Preparation
Ensure oil/shortening is in the tank
Use a high-grade pyrometer or digital thermometer suitable for temperature up to 380°F (193°C)
Thermometer Placement
Place the thermometer in the oil above the tip of the appliance’s temperature probe within 1” (2.54 cm) (25.4 mm)
Ensure the thermometer is not touching the heat tube
Thermostat Setting and Monitoring
Light the pilot as described in the manual
Set the thermostat to 325°F (163 °C)
1 Yearly Fryer Inspection
Safety Evaluation
Check that all components are secure and in place
Inspect gas line and retention system
Mechanical Inspection
Inspect frypot and surrounding areas
Check and clean hood drain cup if necessary
Inspect hood baffle for cleanliness
Check flue for debris and downdraft currents
Inspect drain/filtration system for leaks
