1 Daily Fryer Cleaning
Exterior Cleaning
Wipe up any shortening spills on the exterior of the fryer
Use a clean soft cloth while the oil is still warm
Surface Cleaning
Use warm water with a mild detergent to clean surfaces
Ensure no water gets into the shortening
Ensure all detergent is removed from the fry tank
Stain Removal
Use a nonabrasive scouring powder or pad to clean stains if necessary
Filter Maintenance
FILTER PROCEDURES
Wear oil-proof, insulated gloves when working with hot oil
Run the filter system without a filter bag/paper
Ensure fryer burners are OFF before emptying oil from the fryer
Store the UFM Filter Unit in the fryer filter cavity
Filter Pan Maintenance
Slide the filter pan out
Remove filtered residue off the filter media and examine for clogs or tears
Refer to filter media replacement instructions if necessary
Fryer Tank Draining
Preparation
Ensure you have the necessary equipment
Draining Process
Rotate the drain down spout into the container
Open the green handled drain valve
Is the container full or the fry tank empty?
Close the green handled drain valve
Repeat draining process if necessary until fryer tank is empty
Post-Draining
1 Weekly Fryer Cleaning
Preparation
Completely shut down the fryer before starting the cleaning process
Ensure the fryer is cooled down before draining oil
Oil Draining
Drain the oil from the fryer using the fryer drain procedures
Disconnect the filter pan and remove it from the fryer
Cleaning Preparation
Remove tube rack/mesh tube screens and large debris from the fry tank
Close the drain valve and fill the fry tank with water and noncaustic detergent
Fryer Filter Media Replacement
Safety Precautions
Disconnect the power supply before servicing or cleaning the appliance
Wear insulated oil-proof gloves when working on the filter system
Filter Media Removal
Ensure the filter assembly has cooled to room temperature before handling any filter parts
Remove the filter media by pulling the assembly toward the front of the fryer
Separate the filter pickup tube from the filter pickup screen assembly
Swing the pickup tube to the left until it rests on the left hand side of the filter pan
Shake off and discard any debris from the filter screen pickup assembly
