1 Weekly Fryer Peventative Maintenance
Preparation
Turn the appliance OFF and allow oil/shortening to cool to room temperature.
Ensure no oil/shortening is present in the tank before starting maintenance.
Disconnection and Movement
Disconnect the gas hose and retention lanyard.
Wear protective gear and pull the appliance away from the hood.
Inspection and Cleaning
Check that vent hood drip cup is empty and not dripping oil/shortening into the flue.
Check that the hood baffles are clean and not dripping oil/shortening into the flue.
Thermostat Calibration Check
Preparation
Ensure oil/shortening is in the tank
Use a high-grade pyrometer or digital thermometer suitable for temperature up to 380°F (193°C)
Thermometer Placement
Place the thermometer in the oil above the tip of the appliance’s temperature probe within 1” (2.54 cm)
Ensure the thermometer is not touching the heat tube
Thermostat Setting and Monitoring
Light the pilot as described in the manual
Set the thermostat to 325°F (163 °C)
1 Yearly Fryer Inspection
Safety Evaluation
Check legs, casters, wheels, plate welds and ensure all nuts and bolts are secured.
Check conditions of flexible gas line and verify appliance retention / lanyard system is in place.
Mechanical Inspection
Check frypot for shortening leaks and excessive oil build up
Check for oil migration and clean as required.
Check hood components
Check drain/filtration system (if equipped) for leaks
Check for missing appliance parts and fasteners
1 Weekly Cook Tank Cleaning
Preparation
Turn OFF and drain the oil/shortening following procedure 4.2 (COMPLETE SHUTDOWN).
Allow the unit to cool.
Cleaning Components
Remove components for cleaning
Clean components in pot sink, power soak sink or dishwasher.
Tank Cleaning
Remove loose debris using cleaning brush, crumb scoop, and clean out rod.
Scrub all tank surfaces.
1 Daily Fryer Cleaning
Safety Precautions
Wear apron, heat resistant gloves, and goggles for protection
Daily Cleaning
Filter the oil using a clean filter
