Vulcan Braising Pan VG40

Ensure the tilting braising pan and its parts are cool before starting

Disconnect the electrical power to the machine

Follow lockout / tagout procedures

Have a Vulcan authorized service person clean the tilting braising pan

Have a Vulcan authorized service person adjust the tilting braising pan for maximum performance

Disconnect the electrical power to the machine

Follow lockout / tagout procedures

Cleaning the Braising Pan Surface

Clean the pan surface with a brush or flexible spatula

Check the pan surface for carbonized grease

Remove the strainer at the pouring lip of the braising pan

Ensure the tilting braising pan and its parts are cool before starting.

Disconnect the electrical power to the machine.

Follow lockout / tagout procedures.

Locate the lid lift mechanism and tension spring behind the backsplash on both the left and right rear corners of the braising pan.

Remove the cover by prying and lifting up.

Apply 8 to 10 drops of lubricating machine oil to the lid lift mechanisms.

Disconnect the electrical power to the machine and follow lockout/tagout procedures

Clean the pan surface thoroughly

Use a griddle stone or brush on the surface if necessary

Use detergent on the pan surface to help clean it

Ensure the detergent is thoroughly removed from the pan surface

Clean other stainless steel surfaces with a damp cloth

Polish stainless steel surfaces with a soft, dry cloth

Use a nonabrasive cleaner to remove discolorations

Fill the pan with approximately 10 gallons (38 L) of warm water and add detergent

Disconnect the electrical power to the machine

Follow lockout / tagout procedures

Thoroughly clean the back of the pan

Thoroughly clean the sides of the pan

Thoroughly clean the front of the pan

Clean the inside surface of the lid
