1 Monthly Fryer Temperature Check
Preparation
Ensure the use of a high grade pyrometer or digital thermometer suitable for temperatures up to 380°F (182°C)
Place the thermometer in the oil above the tip of the fryer’s temperature probe within 1” (2.54 cm / 25.4 mm)
Ensure the thermometer does not touch the heat tube
Temperature Check for Models with Solid State, Digital or Computer Controls
Record the controller’s setpoint temperature
Record the thermometer's temperature reading
Is the thermometer reading within ± 5°F (± 3°C) of the controller’s setpoint?

Wear protective gear before pulling the fryer away from the hood
Inspection
Check that vent hood drip cup is empty and not dripping oil/shortening into the flue
Check that the hood baffles are clean and not dripping oil/shortening into the flue
1 Daily Cook Tank Cleaning
Preparation
Turn the appliance off
Drain all the oil/shortening from the tank and allow the tank to cool
Cleaning Components
Remove components for cleaning
Using the cleaning brush, remove all the loose debris and scrub all tank surfaces
For tougher carbonized oil/shortening and carbon buildup scrub tank using a Scotchbrite or other abrasive pad
