1 Daily Gas Oven Cleaning
Preparation
Ensure the oven is cool and unplugged before starting any cleaning or maintenance.
Confirm that high pressure water will not be used for cleaning.
Cleaning Stainless Steel Surfaces
Select the surfaces to wipe down
Use non-abrasive cleaners and wipe with the grain of the surface.
Control Panel and Electronic Components
Use Lexan® compatible cleaners on the control panel.
Avoid using caustic cleaners on the control panel and electronic components.
1 Monthly Hood Duct and Exhaust Fan Cleaning
Safety Precautions
Ensure the oven is cool and the electric cord is unplugged.
Use caution when lifting shroud panels, as they can weigh up to 60 lbs (27 kg).
Avoid spraying liquid cleaning agents in the hood electrical box and the User Interface.

Gas Oven Testing
Initial Setup
Ensure the oven is operating at 450o-500oF / 232o-260oC
Turn off the conveyor
Turn on the ventilation hood exhaust fan
Smoke Candle Test
Place a smoke candle in a pan on the conveyor belt at the center of the oven
Observe and describe the smoke pattern coming out of the oven
Did the ventilation hood capture all of the smoke from the oven?
