Pilot Burner Cleaning
Open Top/Hot Top/Griddle/Broiler/Front Fired Hot Top
Remove the main burners
Disconnect the pilot gas supply pipe from the pilot burner
Remove the pilot burner
Clean the pilot burner by blowing through it or washing it
Reassemble the pilot burner in reverse order
Oven
Remove the oven bottom assembly (except for RC convection units)
Remove the two screws securing the front air shield and remove it from the oven
1 Weekly Griddle Cleaning
Preparation
Ensure griddle, open top grates, burners, hot tops, and broiler components are cool to the touch.
Cleaning Procedure
Use a grill stone or grill pad to clean the griddle surface while warm, rubbing with the grain of the metal.
Use detergent on the plate surface if necessary, ensuring it is thoroughly removed.
Apply a thin film of oil to the griddle surface to prevent rusting.
Use a non-abrasive cleaner to remove discoloration.
Post-Cleaning
Re-season the griddle before re-use.

Rinse the burner and shake it well to remove the water
Ensure the ports are free of debris and clear if necessary
