Ensure oil is drained if moving the fryer is necessary

Reconnect restraint if disconnected for cleaning

Cleaning Stainless Steel Surfaces

Use ordinary soap and water with a sponge or cloth

Dry thoroughly with a clean cloth

Avoid using vinegar or corrosive cleaners

Removing Baked-on Grease and Food Splatter

Apply cleanser to a damp cloth or sponge

Ensure service work is performed by a qualified technician

Use only approved Avantco replacement parts

Is the thermostat set to 'OFF' and the gas valve knob to 'PILOT'?

Remove pressure tap plug from burner manifold

Install fitting to connect a manometer

Ensure service work is performed by a qualified technician

Confirm adjustments and service work are performed by a qualified technician

Temperature Check and Calibration

Select the temperature test instrument used

Record the temperature reading in the center of the frypot

Is the temperature setting accurate within 10°F?

If necessary to move the fryer for cleaning, drain oil first to avoid death or serious injury.

If disconnection of the restraint is necessary to move the appliance for cleaning, reconnect it when the appliance is moved to its originally installed position.

Turn thermostat knob to 'OFF' position.

Place hot-oil safe container under the drain and drain the frypot completely.

Remove the basket support frame (if applicable) and flush out any sediment remaining in the frypot with a little hot oil.

Wipe off the basket support frame and the inside of the frypot with a clean cloth.

CAUTION: SOME AREAS OF THE FRYPOT MAY BE HOT!

Is the technician qualified and experienced in commercial gas cooking equipment maintenance?

Are only approved Avantco replacement parts being used?

Measure the length of the inner cone of the flame from each port

Does the main burner flame burn with a steady blue flame?

Does the flame from each main burner enter each heat tube without touching the front of the frypot or the sides, top, or bottom of each tube?

Was the maintenance performed by a qualified technician?
