Ensure oil is drained before moving the fryer to avoid burn hazards.

Reconnect the restraint if it was disconnected for cleaning.

Close drain valve and fill frypot with warm water and boil-out compound.

Relight the fryer and bring the solution to a gentle boil for at least five minutes.

Turn off main burners and let the solution stand to soften deposits.

Scrub the frypot walls and heat tubes, then drain and rinse with clean water.

Refill the frypot with clean water and boil again.

Ensure oil is drained before moving the fryer to avoid burn hazards.

Reconnect the restraint if it was disconnected for cleaning.

Turn thermostat knob to 'OFF' position.

Place hot-oil safe container under the drain and drain the frypot completely.

Remove the basket support frame and flush out any sediment with hot oil.

Wipe off the basket support frame and the inside of the frypot with a clean cloth.

Temperature Check and Calibration

Record appliance temperature using a thermocouple or thermometer

Enter the temperature setting requiring the greatest accuracy

Is the temperature stabilized with identical readings?

Ensure oil is drained if moving the fryer is necessary

Reconnect restraint if disconnected for cleaning

Use ordinary soap and water with a sponge or cloth to clean stainless steel surfaces

Dry thoroughly with a clean cloth

Avoid using vinegar or corrosive cleaners

Apply cleanser with a damp cloth or sponge in the direction of polishing lines

Avoid rubbing with a circular motion

Is the technician qualified and experienced in commercial gas cooking equipment maintenance?

Are only approved Avantco replacement parts being used?

Measure the length of the inner cone of the flame from each port

Does the main burner flame burn with a steady blue flame?

Does the flame from each main burner enter each heat tube without touching the front of the frypot or the sides, top, or bottom of each tube?

Was the maintenance performed by a qualified technician?
