Set thermostat of one burner to 450°F (229.9°C)

Adjust air shutter for soft blue flame with luminous tips

Open air shutter until yellow tips disappear and hard blue flame is obtained

Repeat flame adjustment for all burners

Bypass Adjustment on Throttling Control Models Only

Set the control at the maximum setting and wait for the burner flame to throttle back.

Turn the dial to the 200 degree setting.

Is a small steady flame visible on all the burner ports?

Measure the flame height in inches.

Adjust air shutter for flame quality

Griddle Care (Non-Chromium Areas)

Scrape the griddle with a scraper or flexible spatula to remove excess grease and food after each use.

Scour and reseason the griddle if there is an accumulation of burned on grease and food.

Use pumice or griddle stone while the griddle is warm for scouring.

Avoid using steel wool to prevent steel slivers in food.

Clean the stainless steel body of the griddle daily with a clean cloth and non-abrasive cleaner.

Wipe the polished front with a soft cloth daily.

Remove and wash the waste drawer at least once a day.
