Set thermostat of one burner to 450°F (229.9°C)

Adjust air shutter for soft blue flame with luminous tips

Open air shutter until yellow tips disappear and hard blue flame is obtained

Repeat flame adjustment for all burners

Bypass Adjustment on Throttling Control Models Only

Set the control at the maximum setting and wait for the burner flame to throttle back.

Flame Observation and Adjustment

Turn the dial to the 200 degree setting.

Is a small steady flame visible on all the burner ports?

Measure the flame height in inches.

Adjust air shutter for flame quality

Griddle Care (Non-Chromium Areas)

Scrape the griddle with a scraper or flexible spatula after each use to remove excess grease and food.

Scour and reseason the griddle if there is an accumulation of burned on grease and food using pumice or griddle stone while warm.

Use a clean cloth and non-abrasive cleaner daily to clean the stainless steel body of the griddle.

Wipe the polished front with a soft cloth daily.

Remove and wash the waste drawer at least once a day.

Regularly remove excess oil and food with a 4" (100mm) wide Razor Sharp type scraper.

Wipe the surface with a damp cloth after scraping.
