Use this checklist for your fryer's preventive maintenance. Prolonged use causes the reduction of the shortening flashpoint. Shortening should be discarded to avoid excessive smoking or foaming. This will help you aviod serious burns, personal injury, fire and/or property damage. .

    Warning! Put on protective gear: Be sure to use all McDonald’s approved safety equipment including, apron, face shield and gloves. Never begin filtering until you’re wearing all safety gear. Hot oil can cause severe burns.

    In order to assure good oil pumping performance, the filter pad (or paper) should be changed at least once per day

    Notice: If the filter pad has not been changed, a reminder shows on the display, “CHANGE PAD”. Press übutton to cancel the message, but it reappears every 4 minutes until the filter pad has been changed.

    The basket rest, on the rear shroud of the fryer, should be removed and cleaned periodically.

    Warning! Burn Risk! Use protective gloves when removing the basket rest. The basket rest may be hot and burns could result.
